Elrood's Famous Fried Chicken

Place 1 live, well fed chicken on a concrete block. 
Cast Fireball.

And here's the one for you regular humans.
For the batter:

2/3 TB salt (depending on the size you cut your chicken pieces) - smaller than 2", I leave this out

3 TB white pepper

1 TB black pepper

1/2 TB basil

1 TB celery salt

1 TB dried mustard

2 TB garlic salt

1 TB ground ginger

1/3 TB oregano

4 TB paprika

1/2 TB thyme

2 cups flour



1 egg and 1 cup whole milk for the egg wash.



I cut my chicken usually into 4-6 small pieces per breast, but that's however you like it. Dip the chicken in the egg wash, then into the seasoning, coating it really well. I do this with roughly 2-4 breasts depending on size. Once I have them all coated, I repeat the egg wash and the breading for an extra thick coating. If you leave the skin on, you most likely don't need the 2nd round. 

Preheat your oven to 175° F

Deep fry at 350° F for 8 minutes to 12 minutes depending on the size of your pieces. The batter will turn dark brown - I think it's the paprika doing this.

Take the chicken out of the deep fryer and place on a cookie sheet in the oven for 12-15 minutes. This does the same thing that happens to chili or lasagna as it sits overnight - just blends the flavors.
